Pickles and Chutney

 

In this hands-on cooking class we will focus on pickle and chutney making. We will review canning safety and techniques of boiling water bath canning, but this class is geared to those who have had some experience with waterbath canning. We will pickle some fruit, some vegetables, and also make chutneys we can use to dress up our barbeque’d meats or liven up a cheese plate. Each student will get at least 3 jars-of pickled vegetable, pickled fruit, and chutney.

Preserving Citrus: Marmalade

Learn to make dazzling citrus marmalades from the best the winter season has to offer. We will use fresh, organic citrus and make a bitter, sweet, and succulent marmalade. We will discuss different types, uses, and the history of marmalade. Participants will take home at least 1 jar of handmade marmalade preserves.

Instructor: Kathy has been an avid canner for over two decades. She tries to forage for the fruit she preserves and/or uses fruit grown from local farms and orchards whenever possible. She is a mother of two boys, and has a full pantry of canned goods. A Ph.D. trained scientist, she loves understanding the science behind canning and loves sharing information about home food preservation with as many people as she can. Parlaying her love of canning into a career, Kathy founded Modern Gingham Preserves and sold her jams nationally and won a Good Food Award for her Raspberry Violet jam in 2015.

Kathy is married to a British guy, so she has also developed a taste for marmalade and rhubarb, but she still hates drinking tea.

Rocky Mountain Horticulture I: Gardening Principles

Rocky Mountain Gardening Required Course Group I

This class details all the specifics necessary to grow plants successfully in the Rocky Mountain region. Soil preparation, plant choice and location, planting techniques and year-round maintenance specific to Colorado will be covered. We'll review plant growth, fertilizers, microclimates and more.

Instructor: Thaddeus Gourd attended New Mexico State University where he graduated with a B.S. degree in Pest Management and Horticulture. He earned a Master’s Degree with thesis study in Entomology at New Mexico State University and a Ph.D. in Plant Pathology with emphasis on plant parasitic nematodes at North Carolina State University. Thaddeus has worked over 19 years in the private sector of the plant science business and since 2000, has worked at Colorado State University Extension as an Agriculture Agent and Director for Adams County. He has extensive experience of gardening and greenhouse management and has been involved in the practice of Integrated Pest Management for over 30 years.

Rocky Mountain Horticulture II

Rocky Mountain Gardening Required Course Group I

Rocky Mountain Horticulture II is an introduction to general information on plant management. Each of these four classes will present an overview by an expert from the Colorado State University Cooperative Extension Service. Topics include the identification and control of lawn and garden weeds, diseases and insects, and integrated pest management.

Jeanette Burkle is a commercial and editorial photographer with extensive experience in teaching, lecturing, and consulting. Since 2003, Jeanette has successfully owned and managed Galie Photography, while designing and delivering seminars on a wide range of photography topics. An award winning-photographer, Jeanette combines an engineering background with a strong artistic sense. With the belief that photography is part art and part science, she strives to use her unique background to produce art that is infused with a creative vision and improved by knowledge of the underlying scientific principles of photography. She has worked with many corporate clients including ExxonMobil, George Mason University, American Red Cross, John Marshall Bank, AmeriChoice, Medtronic, Harris Corporation, and Long & Foster Realty. Jeanette’s work has been honored through the Virginia Professional Photographers Association with such recognition as the highly distinguished Fuji Masterpiece Award and the Kodak Gallery Award.

Jeanette has been teaching photography since 2005. Her students respond well to her fun, upbeat classes, and Jeanette loves to see this passion be reflected in her students’ increased confidence as photographers.

Starting Your Garden from Seed

Rocky Mountain Gardening Elective

Few things excite a gardener more than buying new plants for their gardens, especially if the plants are exotics, unusual or heirlooms. Second-only to the creation of new plants is the financial benefit of growing your own plants, whether flowers, herbs or vegetables.

This class will demystify the seed-starting process primarily focused to the novice gardener, but a good review of the best success tips if a more advanced gardener needs a refresher. Learn simple seed botany and the process of best practices for successful seed germination, successful transplanting, and seed collection and storage and cover some of the reasons seeds and seedlings fail.

After discussion, participants will get a hands-on demonstration and students will leave with seed trays and seeds to return home and practice what you have learned in class. This class will help you up your game to produce all the transplants you could possibly need and set you up for upcoming classes on spring and summer vegetable gardening and succession planting.

Learn how to design and plant your own living succulent centerpiece using gorgeous, fresh succulents. Hardy and water-wise, succulents are perfect for our wild Colorado climate. The diversity of shapes and textures will set your imagination on fire! We discuss succulent care, propagation techniques, varieties of succulents and principles of design. Some fun, reflective wordplay awakens our creative soul. Push pause on the hustle and take a few hours to play with succulents. You will rediscover your creative spirit (its in there, I promise!) and take home your own living succulent centerpiece to enjoy. Note: Instructor provides 5 specialty succulents, a 6-inch container, soil and tools. Please bring a journal and pen. If you would like to personalize your creation, please bring seedpods, shells, dried flowers, sea glass, additional succulents or other special small objects of your choice.

Instructor: Christine Bayles Kortsch, PhD, is the writer, designer, and photographer behind Tiny Dino Worlds: Create Your Own Prehistoric Habitats (forthcoming with Roost Books, spring 2020). She has published essays on family and gardening in Taproot and 5280 Magazine. You may have read her interview in VoyageDenver or seen her succulent designs in The Denver Post. Christine holds a PhD in English Literature, and she teaches writing at the Rocky Mountain College of Art and Design. Sustainable Greenhouse Design

Can you create a greenhouse that needs no supplemental heating or cooling year-round? The answer is yes!

No more over-heating and freezing as is common in all-glazed greenhouses   this design balances the use of thermal mass, glazing, insulation and sun angles to achieve the stabilization needed in our extreme climate without the use of fossil fuels.

This class takes a comprehensive look at how passive solar greenhouses work, how to orient the building, basic principles of passive solar design including the use of stored water as thermal mass, simple math formulas to help guide you with your design, a materials list and drawings and calculations for a 13 X15  greenhouse.

The Parmenters share what they have learned about state-of-the-art and salvaged materials and cost-saving strategies.

Penn and Cord Parmenter are high altitude food and seed growers. In 1991, they began homesteading and growing on 43 acres in the Wet Mountains of South-Central Colorado at 8,120 ft. They apply a multitude of techniques to overcome the challenges of the high country. They are owners of Smart Greenhouses LLC, a sustainable greenhouse design company and Miss Penn s Mountain Seeds, providing regionally adapted seeds for extreme climates.

 

Water Wise Landscape Planning for Non-Designers

Rocky Mountain Gardening Elective

This class will show you how to begin planning a landscape better suited to a dry climate AND your needs. While low water use plants are great, they’re only as good as how you use them in the garden. This class explains how to think through your landscape before you plant to insure success and a put-together look. It will help if you want to plant a landscape yourself or before hiring a designer/contractor to do the work for you. Take home materials give you a way to follow-through with the beginning thoughts you have in class and make your plan.
